  1. Wash and drain the rice. Wash and drain the spinach leaves well..
  2. Heat oil and butter in a pot. Add chopped garlic and then chopped onions to it... fry till pink and then add chives saute and then add spinach. Mix and then add rice to it... mix well and add salt and pepper and 2 cups water to it... cook for 15 -20 mins till the rice is done..

  4. Serve on a plate and garnish with some grated feta cheese and some more chives. Serve hot or cold..
