Crème Brulee step by step

  1. Mix the cream and vanilla and bring to a boil over medium heat. Once it reaches scalding point, remove from the heat.
  2. While the cream and vanilla was boiling, I whisked the yolks and caster sugar for a few minutes until it became really creamy. Pour the cream mixture into the yolk mixture and whisk until it is well combined. Strain the mixture and pour into 4 ramekins.
  3. Preheat the oven to 120C. In a deep roasting pan, place a folded tea towel and carefully place the ramekins over the towel. Pour boiling water into the pan to come halfway up the sides of the ramekins. Cover the pan loosely with foil.
  4. Bake for 40minutes or until the custard is set. Remove the ramekins and set aside to cool. I then placed it in the fridge until it got cold.
  5. When it was time for dessert, I sprinkled the sugar over the baked custards and broiled until the sugar caramelised and formed a hard layer.
