- It's 3 medium brinjals....cooked on flame and peeled.
- Prepare 1 medium tomato (chopped).
- It's 1 small onion or 1/4 of large onion (chopped).
- Prepare 2 tbs lemon juice.
- Prepare 2 tbs yoghurt.
- It's 2 tbs tahina (sesame) paste.
- You need 1 garlic clove (chopped).
- Prepare Half cup chopped parsley.
- You need to taste Salt.
- You need 1/2 tsp Black pepper (optional).
- You need Olive oil as per choice for drizzling over it.
- It's Olives for garnishing.... optional.

- First of all smoke the brinjals on a rack placed on stove...on slow flame until burn all sides or peels of brinjals....then remove skin chopped finely with knife on chopping board.
- Now chopped step by step all veggies....but these shud be finely chopped... garlic.
- Tomatoes.
- Parsley.
- Onion.
- Add 2 tbs yoghurt.
- Add 2 tbs tahina sesame paste.
- Add lemon juice and salt and pepper.
- Mix it well and voila delicious tabbouleh is ready to serve... drizzled olive oil... olives and some tomatoes....
