- Wash and chop the pepper, onions and leek. Heat a little oil in a large frying pan, throw all the veg and stir. Leave to sweat together over a moderate heat for a few minutes stirring now and then.
- Cut the chicken into bite sized pieces and add (if you have kitchen scissors use those - it's quicker than using knife and chopping board and you can cut over the pan so the pieces drop staight in)..
