Honey Scones - This honey scone recipe fits the bill perfectly. Tender and layered, with just a hint of honey-sweetness, and an inviting crumb, honey scones are one of my favorite afternoon treats (this Matcha Lemon Ginger Tart being another - a new favorite). While you all know I love my kitchen gadgets, I always mix scones by hand. This is one of my favorite recipes from my childhood. I always loved to get my hands messy with this one!
This recipe has a sweet twist with the use of some lovely Irish honey alongside the traditional ingredients.

Ingredients cook Honey Scones
- You need 200 g PlainFlour.
- It's 4 Level Teaspoons Baking Powder.
- Prepare 50 g Salted Butter.
- You need 2 Tablespoons Honey (or more if you want sweeter scones).
- It's 75-100 ml Milk.
- It's Egg wash.
Honey Scones step by step
- Heat the oven to 220°C/ 200°C Fan/Gas 7.
- Sieve the flour and baking powder then rub in the cold butter until breadcrumb consistency.
- Drizzle in honey and then mix well with a fork until evenly distributed. Dip the spoon in hot water to help the honey come off the spoon.
- Add the milk gradually until the dough forms. It should be soft and slightly sticky to touch.
- Rest the dough for around 10 minutes and then roll out to about 2.5 cm. Cut into rounds, carefully re-rolling the dough to get around 6 scones. Put the scones on a baking sheet lined with parchment paper.
- Rest the dough again for around 20 minutes then brush with egg wash and and bake in the oven for 10 minutes.
- Check they are fully cooked by tapping the bottom (should sound hollow). Transfer to a cooling rack once you are happy they are cooked..
