Gluten free chocolate cake - My 'Go-To' Gluten Free Chocolate Cake Recipe. This gluten free chocolate cake recipe is my absolute 'go-to'. I have been making it for as long as we have been Coeliac. In a medium mixing bowl (not the bowl of your stand mixer), whisk together the sugar, multi-purpose flour or brown rice flour blend, cocoa, Cake Enhancer, baking powder, salt, and xanthan gum. This gluten free chocolate cake is pretty much exactly that. Quick and easy to make, with an overabundance of cocoa powder and chocolate, without being overly sweet. It walks that line between the bitterness of dark chocolate and the creamy sweetness of milk chocolate - and it does it well.. Thank you and good luck
