Shiso & Chicken Thigh Sweet and Sour Saute - Red shiso is a bit more bitter flavored; it's used in cooked dishes and pickling. The plant occurs in red (purple-leaved) and green-leaved forms. There are also frilly, ruffled-leaved forms called chirimen - jiso and forms that are red only on top, called katamen - jiso. To understand the taste of shiso leaf, you have to try it yourself. I might say cilantro, but haters of cilantro aren't necessarily opposed to shiso. The taste is an interesting and unique one. A friend introduced me to it, and even gave me a potted plant of my own, which I promptly killed. Thank you and good luck
