Ingredients make Victoria Sponge Cake
- You need 11/4 cup + 2 tbsp All Purpose Flour.
- It's 2 tbsp corn Flour.
- You need 1/4 teaspoon Salt.
- You need 1 teaspoon baking powder.
- You need 160 g soft unsalted butter.
- It's 160 g caster Sugar.
- Prepare 3 Eggs.
- Prepare 1 teaspoon vanilla extract.
- You need 2 tbsp Milk.
- Prepare 1/4 cup powdered Sugar for dusting.
- You need 180 ml whipping Cream.
- It's 6 tbsp berry jam.
- You need 1/4 cup powdered sugar.
Victoria Sponge Cake instructions
- Preheat oven to 180, prepare cake tin. You can either use big cake pan or 2 small cake pans of equal size.
- Sieve flours, salt and baking powder in a bowl. keep it aside.
- Blend sugar and butter in a bowl until creamy.
- Add eggs, 1 at a time and blend until pale and frothy.
- Add vanilla extract and blend.
- Add milk and blend well.
- Slowly add dry ingredients. cut and fold until well combined.
- Pour batter into prepared cake tin. Tap and level evenly.
- Bake for 20-25 minutes until done.
- Allow to cool for 30 minutes, demould the cake and cool.
- In case you have prepared big cake, then slice cake in 2 equal halves. keep it aside.
- Whip cream to form peaks. keep it aside.
- Place one part of sliced cake or 1 small cake on serving dish. spread jam evenly on top.
- Now spread the whipped cream evenly on top of jam.
- Place the second half of sliced cake or second small cake on top.
- Dust with powdered sugar on top. Slice and serve.
