Victoria Sponge Cake - A Victoria Sponge was the favorite sponge cake of Queen Victoria, and has since become a tried-and-true recipe for tea-time sponge cakes.   1. Prepare 2 cup self-rising flour.
  2. Prepare 2 cup butter.
  3. It's 4 large free range eggs.
  4. You need 2 cup sugar.
  5. It's 1 tbsp vanilla essence.
  6. You need 2 tbsp milk.
  7. It's 1 can whipped cream.
  8. Prepare 1 bunch fresh berries.

Victoria Sponge Cake step by step

  1. Preheat oven to 180C/350F.
  2. Grease and line a round cake tin (18cm) with baking paper. I usually grease the baking paper with butter and then sprinkle some brown sugar. This makes the cake crust a lovely brown color and adds flavour.
  3. Cream the butter and sugar until fluffy.
  4. Beat in eggs, one at a time...
  5. Add in the vanilla essence.
  6. Add flour and then mix.
  7. Add the milk.
  8. Keep mixing till batter is soft and dropping consistency.
  9. Pour mixture into the cake tin... and spread out the batter with a spatula.
  10. Bake for 20-25mins or until golden brown and check with a tooth pick or skewer inserted in the middle to make sure it comes out clean.
  11. Remove from oven and place on rack to cool.
  12. Decorate with cream and add freshly cut berries.
