These vegan brownies have cocoa powder, melted chocolate and a mix of chocolate chunks and chocolate chips all mixed into the batter and then more chocolate chunks and chips sprinkled on top.

- Prepare 1 1/3 cup almond flour/ finely ground almonds.
- You need 1/2 tsp baking powder.
- It's Pinch salt.
- It's 1/4 cup cacao powder.
- It's 1 cup cacao nibs or roughly chopped 85%+ chocolate.
- You need 1/2 cup coconut oil.
- It's 2/3 cup maple syrup.
- You need 3/4 cup apple sauce.
- It's 2 tsp vanilla extract.
- Prepare 1/2 cup walnuts, roughly chopped.

- Preheat oven to 180C. Line a baking tin with baking paper..
- Mix the almond flour, baking powder, salt and cacao together..
- Melt the coconut oil in a pan on a gentle heat. If youβre using 85% chocolate, melt it along with the oil but use a bowl over a saucepan that has water simmering in it - like in the photo. No need to do this with cacao nibs because they donβt melt π.
- Mix the oil + cacao nibs + the other wet ingredients..
- Mix the wet ingredients with the dry ingredients. (Without the walnuts.).
- Now itβs time for the walnuts πAdd half of the walnuts and gently fold them into the mixture..
- Pour the mix into the tin and sprinkle the remaining walnuts on top. Bake for ~ 25 mins. You have to wait for them to cool before cutting or they fall apart π.
- But once theyβve cooled down... enjoy! π Best kept in the fridge..

Stir ingredients together to form a thin sauce. You can make these vegan gluten free brownies with cocoa powder, either natural * or Dutch-processed *. I know some may argue that Dutch-processed is not exactly Paleo but I couldn't find any evidence-based arguments against it. You can use any type of chocolate chips you prefer, but I find it much harder to find good quality chocolate chips so if you prefer, you can chop up your favourite chocolate bar into small chunks and use them instead.
