Before developing my own homemade Jerk Chicken recipe, I travelled to many of the popular Jerk spots across Jamaica.

Travelling to different spots was my way to find Jerk Chicken that hit the right 'spot'.

Ingredients make Jerk chicken (my way)

  1. It's 300 ml tomato sauce.
  2. Prepare 150 ml water.
  3. It's 3 tsp hot salsa.
  4. Prepare 1 salt.
  5. You need 1 pepper.
  6. You need 1 parsley.
  7. It's 2 clove garlic.
  8. You need 1 large onion.
  9. Prepare 2 large bell peppers.
  10. You need 4 large tomatoes.
  11. You need 1 tsp ginger.
  12. It's 1 tsp curry.
  13. It's 1 lime.
  14. You need 100 grams pineaplle.
  15. It's 1 large carrot.
  16. You need 4 large chili peppers (without seeds).
  17. Prepare 50 grams brown sugar.
  18. It's 1 basil.
  19. It's 1 lime pepper.
  20. It's 400 grams chicken leg's meat.
  21. You need 250 grams rice.
  22. It's 100 grams sour cream.

Jerk chicken (my way) step by step

  1. Peel and square pineapple and lime, set aside 100 grams..
  2. Thinly slice the vegetables, herbs and ginger..
  3. Preheat water in a large pot, add the rice and let it cook for half an hour..
  4. Cut the meat into slices.
  5. Now preheat a large pan. Then stir in tomato sauce, water, herbs and all seasonings except sugar. Keep on stirring..
  6. Stir in all the vegetable slices, lime and pinapple squares, and sugar. Mix.
  7. Preheat another pan, add some olive oil. As sone as the oil starts to blister, add the meat. It should be sautéd for 4 minutes each side with salt and pepper..
  8. When the meat is ready, put it into the other pan and let cook for a few minutes.
  9. Now the rice should be done. Serve everything with some sour cream..
