  2. You need 75 gm soft Brown sugar, light or dark, your choice.
  3. It's 100 gm caster sugar.
  4. It's 3 eggs.
  5. It's 225 gm self raising flour.
  6. It's 200 gm mixed dried fruit.
  7. You need 2 Tbsp lemon juice.
  8. You need 4 Tbsp Demerara sugar.

  1. Preheat oven to 180c, 170 fan, line a 7 inch round tin.
  2. Cream butter, soft Brown and caster sugar until light and fluffy..
  3. Add lightly beaten eggs, one at a time mix well, if mixture separates add spoonful of flour..
  4. Fold in flour, then dried fruit, then lemon juice..
  5. Spoon into prepared tin, level top and sprinkle all over with Demerara sugar, lightly press into surface..
  6. Cook for 60 minutes, check after 40 minutes and cover with foil to prevent over-browning..
  7. Cake is cooked when skewer or toothpick comes out clean. (Hence the hole in the picture !).
  8. Allow to cool in tin for 5-10 minutes, turn out on to wire rack and allow to cool completely..
  9. Enjoy.
  10. You can substitute just sultannas for the mixed dried fruit..
