- It's 1 1/4 cup mashed banana (extra ripe!).
- You need 1 cup rolled oats.
- It's 1/2 cup almond butter.
- It's 1/8 tsp salt.
- It's 1/4 cup chocolate chips (I use dark chocolate).

- Mix all ingredients together, spoon into table size rounds on parchment lined cookie sheet. Flatten with spatula and bake on 350 for 8-10 minutes. Let cool 5 minutes..
- We like to enjoy two each with a scoop of vanilla ice cream or coco whip.
Simple PB Banana Oat Cookies - This easy recipe also happens to be made with no flour, no sugar (the refined kind), and is naturally gluten free. In a small bowl, cream peanut butter and brown sugar until fluffy. Add oats and baking soda to creamed mixture; mix well. Mash bananas with a fork and mix in peanut butter, apple sauce, vanilla, salt, and cinnamon. Drop by tablespoon onto a non stick cookie sheet (lined with parchment paper or sprayed with non-stick spray). I use a small cookie scooper.
