Bakewell Cookies - British bakes don't get much more retro than the Cherry Bakewell tart. I love the thriftiness of it. Very similar in texture and cooking method to my Sunshine Cookies recipe - The joy is in the eating and how quick these cookies come together. Be warned, this is a very sticky mixture. Biscuits inspired by my favourite cake, a Bakewell tart and so it was born - Cherry Bakewell Biscuits.

They are incredibly moreish and Hubby & I are trying not to eat them all in one sitting, and yes they do taste like the hallowed Bakewell.

Ingredients cook Bakewell Cookies

  1. You need 125 g butter (softened).
  2. You need Tsp almond extract.
  3. Prepare 250 g caster sugar.
  4. It's 125 g soft brown sugar.
  5. It's 1 egg.
  6. Prepare Pot of glace cherries.
  7. Prepare 100 g ground almonds.
  8. You need 50 g marzipan.
  9. You need 150 g self raising flour.
  10. It's Handful flaked almonds.
  11. You need 125 g icing sugar.

Bakewell Cookies step by step

  1. Cream together the almond extract, butter and both sugars in a large bowl.
  2. Add the egg and mix well..
  3. Pour the whole pot of glace cherries into a small bowl and cut them up smaller with a knife..
  4. Add into the bowl the flour and ground almonds along with the chopped cherries.
  5. Grate the marzipan over the top to add some extra almond flavour!.
  6. Preheat the oven to gas mark 2/ 150C. Line two large baking trays with greaseproof paper..
  7. Mix everything together with your hands until you make a dough. This is one to roll your sleeves up for!.
  8. Roll the dough into small balls around the size of a golf ball and place onto a baking tray.
  9. Using the back of your hand push them down to flatten slightly.
  10. Sprinkle a few flaked almonds onto each biscuit.
  11. Bake in the oven for 30-35 minutes. You may need to rotate halfway to ensure equal cooking!.
  12. Wait until the biscuits have cooled slightly to make the icing. Then mix together 125g of icing sugar with another splash of almond extract and then enough water to make it into a smooth icing consistency..
