Buckwheat Pie Crust - A month or so ago, I made a Walnut Pie (think Pecan Pie but with walnuts). I'd been wanting to play around with a buckwheat flour-inspired crust, and this felt like the right timing. This vegan apple pie with buckwheat crust is also gluten-free. Apples and buckwheat are a great match, bringing a cozy warm early autumn mood to the table. This pie is great for dessert with ice cream or vanilla sauce, but is perfectly delicious on its own too.
This dough works equally well in sweet and savory pies, tarts, galettes, quiches and turnovers.

Ingredients make Buckwheat Pie Crust
- Prepare 1 1/4 cups all purpose.
- You need 1 1/4 cups buckwheat flour.
- You need 1 tablespoon sugar.
- It's 1/2 tablespoons salt.
- You need 4 tablespoons cold butter (sub with solidify coconut oil).
- It's 1/4 cup reduced soured cream (try subbing with yogurt?).
- It's 3 tablespoons olive oil.
- It's 4 tablespoons icy cold water.
Buckwheat Pie Crust instructions
- Mix ingredients 1 to 4 well.
- Add butter and use your hand to crumble into the dry ingredients.
- Add sour cream and olive oil. Mix with your hand till itβs combined.
- Add water and knead till the dough is smooth. (donβt over work the dough as I researched that buckwheat may produce a very strong bitter flavor of overworked).
- Dough could put in the freezer for up to 6 months!.
Buckwheat Pie Crust - The trickiest thing is finding the buckwheat groats in the first place. Look for them in health food stores, specialty grocers, and co-ops with large bulk foods sections. The effort to find them is worth it because you use them to line the pie pan and that's the crust. Lift crust with a spatula and transfer to a mesh dehydrating rack for faster double-sided dehydrating. When done, crust should be very dry.
