I thought making my own caramel would be really tricky, but it was actually really easy and so much nicer than caramel you'd buy in a tin. Our gluten-free millionaire's shortbread recipe contains a gluten-free shortbread base topped with a generous layer of caramel followed by delicious dark chocolate. I'm about to make a bold claim: this gluten free millionaire's shortbread recipe is probably the greatest recipe I have ever made. Big words, I know, but with a crumbly and buttery shortbread, thick gooey caramel and a deliciously sweet layer of chocolate, these gluten free millionaire's shortbreads are pretty bang on perfect.
They have a layer of coconut flour shortbread, a quick no-cook peanut butter caramel, and a layer of dark chocolate.

Ingredients cook Gluten free Millionaires Shortbread
- You need 360 ml Gluten Free Flour.
- It's 100 ml Icing Sugar.
- It's 225 ml Margerine.
- Prepare 75 ml Golden Syrup.
- Prepare 1 can Condensed Milk.
- Prepare Or make your own as follow:.
- It's 125 ml Cold Water;.
- It's 300 ml Milk Powder (I used Rice milk powder);.
- Prepare 190 ml White Sugar; and.
- Prepare 3 ml Vanilla Essence.
- Prepare 5 ml Vanilla Essence.
- It's 125 ml Margerine.
- Prepare 200 g Dark Chocolate (I find milk is to sweet for me(.
- It's 15 ml Sunflower Oil.
Gluten free Millionaires Shortbread step by step
- Pre Heat oven to 175°C.
- Sift the gluten free flour and icing sugar together. Rub in the 225ml Margerine..
- Place in prepared oven proof bowl and bake 15-20min until golden brown..
- To make your own condensed milk, mix together the milk powder, cold water, sugar and 3ml vanilla essence, in a microwave safe bowl.
- To the condensed milk add the golden syrup, 5ml vanilla essence and 125ml margerine. Microwave on high for 8-9 min stirring every 1-2 min until caramel. Be careful not to burn.
- Spread caramel over cooled shortbread. Let it cool completely..
- Melt chocolate with the sunflower oil over a saucepan of boiling water or microwave.
- Spread chocolate over cooled caramel. I sprinkle white chocolate chips over for fun..
- Let it cool for another 15min in the fridge. Cut into squares and enjoy..
