- It's 300 ml Double Cream.
- It's 200 ml whole gold top milk.
- It's 65 gm Sugar.
- Prepare 2 leaves gelatine (soaked).
- You need 1 fresh Vanilla pod.
- You need 250 ml Red Wine.
- It's 3 tbsp sugar.
- You need Few drops of lemon juice.
- You need 1 selection of Red Berries. I used a handful of each... Strawberries, Blueberries, Raspberries & Pomegranate seeds.

- Add cream & milk & start to heat gently over a medium heat..
- Split the vanilla pod, scrape out the seeds & add to the pan. Set aside vanilla pod..
- Add sugar to the pan & continue to heat but do not allow to boil. Once sugar has dissolved remove from heat & stir in soaked gelatine until smooth. Strain into moulds & allow to cool before placing in fridge to set. Normally 3/4 hrs.
- Add wine sugar & vanilla pod to pan & bring to boil. Reduce until liquor just begins to thicken. Take off heat & remove vanilla pod. Add berries & & few drops of lemon & marinade for about 3hrs.
