- You need Rice:- 1 cup/200 gram basmati rice.
- You need 2 cups water.
- It's Salt as per taste.
- You need 2 1/2 tablespoon lemon juice.
- You need 1 tsp urad dal soaked.
- You need 1 tsp chana dal soaked.
- It's 1 tbsp oil.
- You need 2 tbsp peanuts raw.
- You need 1/2 tsp mustard seeds.
- You need 10-12 curry leaves.
- Prepare 2 green chilli sliced.
- Prepare 1/4 tsp haldi powdered.
- It's Pinch hing.
- You need Masala curd:- 1 cup curd.
- It's Salt as per taste.
- Prepare 1 green chilli chopped.
- It's 1 tbsp onion chopped.
- It's 1 tbsp tomato chopped.
- It's Pinch red chilli powder.
- It's 1 tbsp boondi.
- Prepare For masala mango pickle.
- Prepare 1 raw mango.
- You need 1 tbsp pickle masala.

- For rice:- wash the rice in 2 cups of water and cook until done. Strain so that no water is left.
- Mean while soak urad dal and chana dal in water for 10-15 minutes. Then drain the water from the dals and set aside..
- Collect all ingredients for rice..
- Once the rice is cool down. Then add the salt and lemon juice and mix well until combined and set it aside..
- Heat oil in a pan on medium heat. Add mustard seeds and let them pop..
- Add the soaked and drained dal to the pan. Saute until they turn light golden brown..
- Add the peanuts and saute until golden brown..
- Now add the curry leaves and chilli and saute for few seconds..
- Then add the haldi powder, hing and mix well..
- Now add cooked rice and mix all the seasoning well with the rice. Adjust salt and lemon juice to taste at this point..
- For curd:- collect all ingredients for curd and mix well..
- Mix mango and pickle masala and mix well..
- You can also use leftover rice in this dish..
